Description

A refreshing dairy-free tzatziki made with yogurt, cucumber, garlic, and herbs. Perfect as a dip or condiment!


Ingredients

  • 1 cup dairy-free yogurt (coconut or almond-based)
  • 1 medium cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • to taste Salt
  • to taste Pepper
  • optional Fresh dill or mint

Instructions

  1. Wash the cucumber and grate it with a box grater or food processor. Place the grated cucumber in a clean kitchen towel and squeeze to remove excess moisture.
  2. In a mixing bowl, combine the dairy-free yogurt, drained cucumber, minced garlic, olive oil, and lemon juice. Stir until well incorporated.
  3. Season with salt and pepper to taste. If desired, add chopped fresh dill or mint.
  4. Refrigerate for at least 30 minutes to allow flavors to meld.
  5. Serve cold as an appetizer or condiment.

Notes

  • Make sure to thoroughly drain the grated cucumber to prevent watery tzatziki.
  • For a sweeter flavor, consider roasting the garlic before adding.
  • Be bold with your herbs! Skip fresh dill or mint for parsley or basil for a twist.
