Description
A refreshing dairy-free tzatziki made with yogurt, cucumber, garlic, and herbs. Perfect as a dip or condiment!

- 1 cup dairy-free yogurt (coconut or almond-based)
- 1 medium cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice

- to taste Pepper
- optional Fresh dill or mint
Instructions
- Wash the cucumber and grate it with a box grater or food processor. Place the grated cucumber in a clean kitchen towel and squeeze to remove excess moisture.
- In a mixing bowl, combine the dairy-free yogurt, drained cucumber, minced garlic, olive oil, and lemon juice. Stir until well incorporated.
- Season with salt and pepper to taste. If desired, add chopped fresh dill or mint.
- Refrigerate for at least 30 minutes to allow flavors to meld.
- Serve cold as an appetizer or condiment.
Notes
- Make sure to thoroughly drain the grated cucumber to prevent watery tzatziki.
- For a sweeter flavor, consider roasting the garlic before adding.
- Be bold with your herbs! Skip fresh dill or mint for parsley or basil for a twist.
