Ingredients

  • 10 oz fresh Chinese noodles (or dried wheat noodles)
  • 1 pinch salt (for boiling water)

Instructions

  1. Prepare scallions by washing, drying, and cutting into 2-inch pieces.
  2. Heat oil in a small pot and fry scallions over low heat until golden brown.
  3. Remove fried scallions and reserve the aromatic oil.
  4. Add soy sauces, oyster sauce, and sugar to the warm oil; stir to combine.
  5. Boil noodles until tender; drain well.
  6. Toss noodles with scallion soy sauce mixture until evenly coated.
