Description

Delicious no-bake cookies made with creamy peanut butter, oats, and a few simple ingredients.


Ingredients

  • ½ cup butter (unsalted)
  • 1 ¾ cup white sugar
  • ½ cup milk
  • 1 cup creamy peanut butter (unsweetened)
  • 1 tsp vanilla extract
  • 3 ½ cup old fashioned rolled oats or quick oats
  • ⅛ tsp salt

Instructions

  1. Make sure to have all your ingredients measured and ready before starting, and read the directions thoroughly as the process is quick!
  2. Line two cookie sheets with parchment paper.
  3. In a 3-quart saucepan over medium heat, melt the butter. Stir in the sugar and milk, whisking until smooth.
  4. Bring to a boil and cook for about 1 ½ minutes, stirring occasionally. It’s important to reach a temperature of 230°F on a candy or instant-read thermometer. If you don’t have a thermometer, cook for approximately 1 ½ minutes on medium heat.
  5. Remove from heat and stir in peanut butter, salt, vanilla, and oats. Stir well.
  6. Drop 1 ½ tablespoon-sized balls of dough onto the prepared baking sheets using a cookie scoop.
  7. Allow them to set or chill in the refrigerator for quicker hardening.
