Description

Delicious and moist banana muffins made with wholesome ingredients.


Ingredients

Scale
  • 2 cups mashed ripe bananas (about 4 medium)
  • 3/4 cup diced apples (about 1 small apple)
  • 1/2 cup avocado oil (or olive oil)
  • 1 cup tiger nut flour
  • 1/2 cup coconut sugar (maple sugar or evaporated cane juice)
  • 2/3 cup cassava flour
  • 2 teaspoons molasses
  • 1 teaspoon dried ginger
  • 1/4 teaspoon cardamom (use mace for AIP)
  • 2 drops cloves essential oil or 1/8 teaspoon cloves powder
  • 11/4 teaspoons baking soda
  • 3/4 teaspoon sea salt

Instructions

  1. Line muffin tin; set aside.
  2. Preheat oven to 325℉.
  3. Smash bananas in a large mixing bowl. Add apples, oil, sweetener of choice, and molasses.
  4. Place remaining dry ingredients on top: tiger nut flour, cassava flour, spices, baking soda, and sea salt.
  5. Stir together with a spatula well, but without over-mixing. The batter will be thick.
  6. Fill muffin tin. This recipe makes 6 jumbo muffins, or 8 to 10 smaller muffins.
  7. Bake for 20 to 25 minutes.
  8. Allow to cool on a rack, then enjoy.
  9. To store, place in a sealed container on the counter for up to 2 days, or freeze for up to 3 months. To defrost, place at room temp for 2 hours, or overnight.

Notes

  • For AIP, substitute cardamom with mace.
  • Ensure that bananas are well-ripened for the best flavor.
