A delicious and creamy casserole made with russet potatoes, smoked kielbasa, and sharp cheddar cheese, perfect for a comforting meal.

- 1 ½ pounds russet potatoes, peeled and diced into 1-inch cubes
- 14 oz smoked kielbasa sausage, sliced into ¼-inch rounds
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- ½ cup heavy cream
- 2 cups shredded sharp cheddar cheese
- ½ teaspoon paprika
- ½ teaspoon black pepper
- Salt to taste
- 1 teaspoon dried parsley (or fresh for garnish)
- Nonstick spray or butter for greasing the casserole dish
Instructions
- Peeled and cube the potatoes into 1-inch pieces for even cooking. Slice the kielbasa and prep the aromatics.
- In a large skillet, brown the kielbasa over medium heat for 5-6 minutes until slightly crispy. Remove and set aside.
- In the same skillet, melt butter and sauté the diced onion until translucent, about 4 minutes. Add garlic and cook for 30 seconds.
- Stir in the flour to create a roux. Slowly whisk in milk and heavy cream until smooth and thickened.
- Season the sauce with paprika, pepper, and salt. Stir in shredded cheddar cheese and melt fully into a creamy sauce.
- Combine the cheese sauce, browned kielbasa, and potatoes in a large bowl. Mix gently to coat everything.
- Grease a 9×13 inch casserole dish and pour in the mixture. Top with extra shredded cheese if desired.
- Cover with foil and bake at 375°F (190°C) for 40 minutes. Uncover and bake for 15-20 more minutes until golden and bubbly.
- Let rest for 5-10 minutes before serving. Garnish with parsley.
Notes
- For even cooking, ensure all potato pieces are similar in size.
- Fresh parsley adds a nice touch for garnish.
