Description
A delicious traybake featuring Bramley apples, perfect for afternoon tea or dessert.

- 1 cup butter (softened, plus extra for greasing)
- 4–5 medium Bramley apples (peeled and thinly sliced)
- 1/2 lemon juice
- 1 cup light muscovado sugar (or brown sugar)
- 2 1/2 cups self-raising flour
- 2 tsp baking powder
- 1 tsp ground cinnamon (divided)
- 4 large eggs (at room temperature)
- 1 tbsp milk
- icing sugar (for dusting)
Instructions
- Preheat your oven to 350°F. Grease a 13×9-inch baking pan with butter and line it with parchment paper.
- Peel, core, and thinly slice the Bramley apples. Toss them gently with the juice of half a lemon.
- In a large bowl, combine softened butter and light muscovado sugar. Mix until creamy, then add in flour, baking powder, half the cinnamon, eggs, and milk. Beat until smooth.
- Pour half of the batter into the prepared pan, spreading it evenly. Arrange half of the apple slices atop the batter and sprinkle with a pinch of cinnamon.
- Spoon the remaining batter over the apples, spreading it gently. Add the rest of the apple slices on top, pressing them slightly into the batter.
- Place the pan in the oven and bake for 40-50 minutes, or until the top is golden brown and a skewer inserted into the center comes out clean.
- Remove the traybake from the oven and let it cool in the pan for 10 minutes. Transfer it to a wire rack, peel off the parchment, and allow it to cool completely.
- Just before serving, lightly dust the top with icing sugar.
Notes
- This traybake can be stored in an airtight container for up to 3 days.
- Great served with whipped cream or custard.
