- 4 boneless, skinless chicken breasts (about 1 lbs)
- 2 tbsp olive oil
- 1 medium onion, thinly sliced
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 cups long-grain white or brown rice
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper, then sear for about 5 minutes per side until golden brown.
- Add sliced onions and minced garlic to the skillet; cook for about 3 minutes until softened.
- Pour in chicken broth and stir in heavy cream, paprika, and thyme; scrape up any bits from the pan.
- Return the chicken to the skillet, spoon sauce over it, cover, and simmer for about 20 minutes until fully cooked.
- Prepare rice according to package instructions while the chicken simmers. Serve chicken over rice with extra sauce drizzled on top.
