Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups long-grain white or brown rice

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper, then sear for about 5 minutes per side until golden brown.
  3. Add sliced onions and minced garlic to the skillet; cook for about 3 minutes until softened.
  4. Pour in chicken broth and stir in heavy cream, paprika, and thyme; scrape up any bits from the pan.
  5. Return the chicken to the skillet, spoon sauce over it, cover, and simmer for about 20 minutes until fully cooked.
  6. Prepare rice according to package instructions while the chicken simmers. Serve chicken over rice with extra sauce drizzled on top.
