Description
This cheesy vegetable bake combines low-fat cottage cheese, mozzarella, and a blend of sautéed vegetables for a delicious and nutritious dish.

- 2 cups low-fat cottage cheese
- 1 cup shredded mozzarella cheese
- 1 cup pizza sauce
- 2 tsp Italian seasoning
- 1 cup chopped bell peppers
- 1/2 cup diced onion
- 3 large eggs
- 1 cup cooked pasta (optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- In a skillet, sauté diced onions over medium heat until translucent. Add chopped bell peppers and cook until softened.
- In a large bowl, mix together cottage cheese, mozzarella, Italian seasoning, eggs, sautéed vegetables, and optional pasta.
- Spread half of the pizza sauce in the baking dish. Pour the cottage cheese mixture on top and drizzle with the remaining sauce.
- Bake for 30-35 minutes or until golden brown and set in the center.
- Let cool slightly before slicing into squares; serve warm.
