Description

This cheesy vegetable bake combines low-fat cottage cheese, mozzarella, and a blend of sautéed vegetables for a delicious and nutritious dish.


Ingredients

  • 2 cups low-fat cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup pizza sauce
  • 2 tsp Italian seasoning
  • 1 cup chopped bell peppers
  • 1/2 cup diced onion
  • 3 large eggs
  • 1 cup cooked pasta (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet, sauté diced onions over medium heat until translucent. Add chopped bell peppers and cook until softened.
  3. In a large bowl, mix together cottage cheese, mozzarella, Italian seasoning, eggs, sautéed vegetables, and optional pasta.
  4. Spread half of the pizza sauce in the baking dish. Pour the cottage cheese mixture on top and drizzle with the remaining sauce.
  5. Bake for 30-35 minutes or until golden brown and set in the center.
  6. Let cool slightly before slicing into squares; serve warm.
