Description

A deliciously creamy and cheesy pasta bake combined with fresh kale and garlic, perfect for a comforting meal.


Ingredients

Scale
  • 8 oz whole wheat pasta
  • 2 cups fresh kale, chopped
  • 3 cloves garlic, minced
  • 1/4 cup pine nuts, toasted
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • to taste Salt and pepper
  • 4 oz cream cheese

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
  2. Cook pasta in salted boiling water until al dente (about 8 minutes). Drain and set aside.
  3. In a food processor, blend kale, garlic, pine nuts, Parmesan, and olive oil until smooth. Season with salt and pepper.
  4. Combine cooked pasta and kale pesto in a large bowl until evenly coated.
  5. Layer half the pasta mixture in the baking dish, add dollops of cream cheese on top, then layer the remaining pasta mixture.
  6. Bake for 25–30 minutes until bubbly and golden on top.
