Description

Ingredients

  • 3 ripe bananas (mashed)
  • 1 cup fresh blueberries
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ cup granulated sugar
  • 2 large eggs (room temperature)
  • ½ cup whole milk (or alternative)
  • ¼ cup melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or cooking spray.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add melted butter, sugar, eggs, milk, and vanilla to the mashed bananas; mix until combined.
  4. In another bowl, whisk together flour and baking powder.
  5. Gently fold the dry ingredients into the wet mixture until just combined; then fold in the blueberries.
  6. Spoon the batter into muffin cups about two-thirds full.
  7. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
