- 4 cups Vegetable broth (homemade or low-sodium)
- 1 cup Basil (fresh leaves)
- 1 cup Parsley (chopped)
- 3 sprigs Dill (add for tanginess)
- 2 cups Spinach (packed with nutrients)
- 1 tablespoon Lemon juice (to brighten flavors)
- 1 cup Croutons (for topping)
- 1 cup Greek yogurt (for creaminess)
Instructions
- Heat olive oil in a large pot over medium heat. Add the finely chopped onion and minced garlic, sautéing until they’re fragrant and translucent, about 3-4 minutes.
- Pour in the vegetable broth, bringing it to a gentle simmer. Scrape the bottom of the pot to release caramelized bits.
- Add fresh basil, parsley, and dill. If using spinach, add it now. Stir well and let everything simmer for about 5 minutes.
- Using an immersion blender, carefully puree the soup until silky smooth. For a chunkier consistency, blend partially.
- Lower the heat and stir in a splash of lemon juice, adjusting to taste. Add more seasoning if needed.
- Ladle soup into bowls. Top with crunchy croutons or a swirl of Greek yogurt. Serve hot.
