  • 1 tablespoon Lemon juice (to brighten flavors)
  • 1 cup Croutons (for topping)
  • 1 cup Greek yogurt (for creaminess)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the finely chopped onion and minced garlic, sautéing until they’re fragrant and translucent, about 3-4 minutes.
  2. Pour in the vegetable broth, bringing it to a gentle simmer. Scrape the bottom of the pot to release caramelized bits.
  3. Add fresh basil, parsley, and dill. If using spinach, add it now. Stir well and let everything simmer for about 5 minutes.
  4. Using an immersion blender, carefully puree the soup until silky smooth. For a chunkier consistency, blend partially.
  5. Lower the heat and stir in a splash of lemon juice, adjusting to taste. Add more seasoning if needed.
  6. Ladle soup into bowls. Top with crunchy croutons or a swirl of Greek yogurt. Serve hot.
