Delicious and crispy chicken taquitos filled with creamy cheese and spices, perfect for dipping in salsa or guacamole.

- 2 cups cooked chicken, shredded
- 8 oz cream cheese, softened
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup salsa, mild or medium
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt
- Pinch black pepper
- 18–20 small corn tortillas (5–6 inch)
- 3–4 cups vegetable oil, for frying
- Optional: Wooden toothpicks
- Optional: Sour cream, guacamole, salsa, cilantro, lime wedges, hot sauce for serving
Instructions
- In a mixing bowl, combine shredded chicken, cream cheese, Monterey Jack cheese, salsa, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Heat vegetable oil in a large skillet over medium heat.
- Warm the corn tortillas in the microwave or on a hot skillet for a few seconds to make them pliable.
- Place a small amount of the chicken mixture in the center of each tortilla and roll them tightly. Secure with toothpicks if necessary.
- Carefully place the rolled taquitos in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
- Remove from oil and drain on paper towels. Serve hot with sour cream, guacamole, salsa, cilantro, lime wedges, and hot sauce.
Notes
- For extra flavor, marinate the chicken before cooking.
- Frozen taquitos can be cooked directly from the freezer; just increase the frying time.
