Description

Delicious and crispy chicken taquitos filled with creamy cheese and spices, perfect for dipping in salsa or guacamole.


Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup salsa, mild or medium
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • Pinch black pepper
  • 1820 small corn tortillas (56 inch)
  • 34 cups vegetable oil, for frying
  • Optional: Wooden toothpicks
  • Optional: Sour cream, guacamole, salsa, cilantro, lime wedges, hot sauce for serving

Instructions

  1. In a mixing bowl, combine shredded chicken, cream cheese, Monterey Jack cheese, salsa, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Warm the corn tortillas in the microwave or on a hot skillet for a few seconds to make them pliable.
  4. Place a small amount of the chicken mixture in the center of each tortilla and roll them tightly. Secure with toothpicks if necessary.
  5. Carefully place the rolled taquitos in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
  6. Remove from oil and drain on paper towels. Serve hot with sour cream, guacamole, salsa, cilantro, lime wedges, and hot sauce.

Notes

  • For extra flavor, marinate the chicken before cooking.
  • Frozen taquitos can be cooked directly from the freezer; just increase the frying time.
