Chicken Breast with Lemon Butter Sauce

Description

Delicious chicken breasts coated in a lemon butter sauce, perfect for serving with fresh parsley.


Ingredients

  • 2 large chicken breasts
  • 2 large eggs
  • 1 cup all purpose flour
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 1 cup chicken broth
  • 1 lemon juiced
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Slice 2 large chicken breasts horizontally into thin cutlets and season both sides with salt and black pepper for even flavor and cooking.
  2. Place 1 cup all purpose flour in a shallow bowl and whisk 2 large eggs in another bowl until smooth and ready for coating.
  3. Dredge each chicken cutlet in flour shaking off excess then dip fully into beaten eggs to create the signature coating.
  4. Heat 3 tablespoons olive oil in a large skillet over medium heat and cook chicken for 3 to 4 minutes per side until golden and cooked through then remove and keep warm.
  5. Reduce heat and add 3 tablespoons butter to the same skillet letting it melt then pour in 1 cup chicken broth and lemon juice scraping the pan to build flavor.
  6. Return chicken to the skillet and simmer for 2 minutes spooning sauce over the top so it absorbs flavor before serving with parsley.

Notes

  • This recipe works well with other herbs besides parsley.
  • For added flavor, try marinating the chicken beforehand.
