Cilantro Lime Steak Bowls

Description

Flavorful and satisfying cilantro lime steak bowls featuring marinated flank steak, rice, beans, and fresh vegetables.


Ingredients

Scale
  • 1 1/4 pounds flank steak
  • 1/3 cup olive oil
  • 1 lime (zested and juiced)
  • 1 tablespoon minced garlic
  • 1/2 cup minced cilantro
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 can black beans (drained and rinsed)
  • 1 cup corn
  • 1 avocado
  • 1/2 red onion (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 batch cilantro lime crema (click for recipe)

Instructions

  1. Whisk together all ingredients for the steak marinade. This includes the olive oil, juice and zest of a lime, garlic, cilantro, salt, and pepper.
  2. Add the steak to a shallow dish and pour the marinade on top. Let marinate in the fridge for at least 1 hour.
  3. Heat a cast iron pan to medium high and place steak on. Cook for 3-4 minutes per side or steak reaches desired internal temperature. I usually do around 145 degrees which is medium-medium/well.
  4. Let the steak rest for 10 minutes, then slice into strips or cubes.
  5. Assemble your bowls with the rice, black beans, corn, avocado, steak, then top with the cilantro lime crema.
  6. You can also add in some chopped lettuce, sauteed bell peppers, and onions. etc! Enjoy!

Notes

  • For best flavor, marinate the steak for longer if time permits.
  • Feel free to customize your bowls with additional toppings like cheese or hot sauce.
