Description

This rich chocolate cake layered with a decadent mousse is perfect for any celebration.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 8 oz. semi-sweet chocolate, chopped
  • 4 large eggs, separated
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups heavy cream
  • Grated chocolate (for garnish)
  • Fresh berries (for garnish)
  • Whipped cream (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 8-inch round cake pans.
  3. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  4. Beat in the eggs, milk, oil, and vanilla extract until smooth.
  5. Gradually stir in the boiling water until fully combined. The batter will be thin.
  6. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes. Then, transfer them to wire racks to cool completely.
  8. In a microwave-safe bowl, melt the semi-sweet chocolate in short bursts, stirring every 30 seconds until smooth. Let it cool slightly.
  9. In a separate bowl, beat the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form.
  10. In another bowl, whisk the egg yolks with vanilla extract until combined. Fold in the cooled chocolate mixture until evenly blended.
  11. In a large mixing bowl, whip the cream until stiff peaks form. Gently fold this whipped cream into the chocolate mixture.
  12. Finally, fold in the beaten egg whites gently, being careful not to deflate the mixture.
  13. Once the cakes are completely cool, place one layer on a serving platter. Spread half of the mousse on top.
  14. Place the second cake layer on top of the mousse and spread the remaining mousse on top.
  15. Refrigerate the assembled cake for at least 2 hours (or overnight) to allow the mousse to set properly.
  16. Before serving, garnish with grated chocolate, fresh berries, or whipped cream as desired.
