Description
This rich chocolate cake layered with a decadent mousse is perfect for any celebration.

- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 8 oz. semi-sweet chocolate, chopped
- 4 large eggs, separated
- ¼ cup sugar
- 1 teaspoon vanilla extract
- 1 ½ cups heavy cream
- Grated chocolate (for garnish)
- Fresh berries (for garnish)
- Whipped cream (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 8-inch round cake pans.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Beat in the eggs, milk, oil, and vanilla extract until smooth.
- Gradually stir in the boiling water until fully combined. The batter will be thin.
- Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes. Then, transfer them to wire racks to cool completely.
- In a microwave-safe bowl, melt the semi-sweet chocolate in short bursts, stirring every 30 seconds until smooth. Let it cool slightly.
- In a separate bowl, beat the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form.
- In another bowl, whisk the egg yolks with vanilla extract until combined. Fold in the cooled chocolate mixture until evenly blended.
- In a large mixing bowl, whip the cream until stiff peaks form. Gently fold this whipped cream into the chocolate mixture.
- Finally, fold in the beaten egg whites gently, being careful not to deflate the mixture.
- Once the cakes are completely cool, place one layer on a serving platter. Spread half of the mousse on top.
- Place the second cake layer on top of the mousse and spread the remaining mousse on top.
- Refrigerate the assembled cake for at least 2 hours (or overnight) to allow the mousse to set properly.
- Before serving, garnish with grated chocolate, fresh berries, or whipped cream as desired.
Notes
- Ensure the chocolate is melted properly to achieve a smooth mousse.
- This cake can be made a day in advance for best results.
- Keep the cake refrigerated if not served immediately.
