Description

A delicious layer of creamy peppermint frosting on top of rich chocolate brownies, perfect for the holidays!


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups powdered sugar
  • 1/2 cup butter (for frosting)
  • 1 1/2 teaspoons peppermint extract
  • 2 tablespoons milk or cream
  • 2 drops green food coloring (optional)
  • 1 1/2 cups semi-sweet chocolate chips
  • 3/4 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch pan.
  2. Melt butter and stir in sugar, eggs, and vanilla.
  3. Mix in cocoa powder, flour, and salt until just combined.
  4. Spread batter into pan and bake for 25–30 minutes. Let cool completely.
  5. Beat powdered sugar, butter, peppermint extract, milk, and food coloring until fluffy.
  6. Spread mint layer evenly over cooled brownies and refrigerate for 30 minutes.
  7. Melt chocolate chips and cream together until smooth to create ganache.
  8. Spread ganache over mint layer and refrigerate until set.
  9. Slice chilled brownies with a hot knife for clean cuts.
  10. Store in fridge up to 5 days or freeze for longer storage.

Notes

  • Feel free to add crushed candies on top for extra flavor.
  • For a gluten-free option, use gluten-free flour.
