Description

This delicious chai spice granola is a perfect breakfast or snack, packed with oats, nuts, and coconut.


Ingredients

Scale
  • 4 cups old-fashioned oats
  • 1 cup chopped walnuts (or pecans)
  • 1 cup shredded coconut
  • 1 tablespoon chai spice blend
  • 1/2 cup maple syrup
  • 6 tablespoons coconut oil (melted)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 300 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, add oats, nuts, coconut, and chai spice. Set aside.
  3. In a bowl, combine maple syrup, melted coconut oil, and vanilla extract. Stir to combine. Pour over oat mixture and toss until evenly coated.
  4. Pour mixture onto prepared baking sheet and spread into an even layer. Bake for about 30-35 minutes, rotating pan once halfway through.
  5. Remove from oven and allow to cool completely on baking sheet. Granola will harden as it cools. Store in an airtight container at room temperature.

Notes

  • For a different flavor profile, feel free to substitute walnuts with pecans.
  • Make sure to stir the granola halfway through baking to ensure even toasting.
