Description
This creamy Gruyere onion dip is perfect for gatherings and pairs well with crackers or veggies.

- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 large yellow onions, thinly sliced
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1 1/2 cups grated Gruyere cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme leaves (optional)
- 1 tablespoon chopped chives or parsley, for garnish
Instructions
- Heat olive oil and butter in a large skillet over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, for 30–40 minutes until deeply golden and caramelized.
- In a large bowl, mix softened cream cheese, sour cream, and 1 cup of Gruyere cheese until smooth. Add salt, pepper, and thyme if using.
- Stir in the caramelized onions, making sure they’re well distributed through the cheese mixture.
- Preheat the oven to 375°F (190°C). Transfer the dip mixture to an oven-safe dish or small cast iron skillet and smooth the top.
- Sprinkle the remaining 1/2 cup Gruyere on top.
- Bake for 20–25 minutes, or until bubbling and golden on top.
- Remove from the oven, garnish with chopped chives or parsley, and let it sit for a few minutes before serving.
Notes
- Serve with fresh vegetables, chips, or bread for dipping.
- This dip can be made ahead of time and baked just before serving.
