Description

A delicious blueberry orange cake, perfect for dessert or a sweet treat!


Ingredients

  • 1 cup fresh blueberries (about 150 grams)
  • 1 large orange (zest and juice)
  • 1/2 cup unsalted butter (113 grams), softened
  • 1 cup brown sugar (200 grams)
  • 1 cup all-purpose flour (120 grams)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar (100 grams)
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (120 ml)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and line the bottom with parchment paper.
  2. Zest the orange and juice it. Set aside the zest and juice.
  3. In a small saucepan, melt the butter and brown sugar together until smooth. Pour into the bottom of the cake pan and arrange the blueberries and orange slices on top.
  4. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  5. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  6. Add the eggs one at a time, mixing well. Then mix in the vanilla, orange zest, and orange juice.
  7. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until just combined.
  8. Pour the batter over the blueberries and orange slices in the pan.
  9. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  10. Allow the cake to cool for 10 minutes, then invert onto a serving plate.
  11. Serve warm or at room temperature, garnished with additional blueberries if desired.
