Deliciously air-fried mixed vegetables that are healthy and easy to prepare.
Ingredients

- 1 cup broccoli florets
- 1 cup cremini mushrooms (large ones halved or quartered)
- 1/2 cup thinly sliced carrots (about two small-medium, peeled)
- 1 small zucchini (sliced)
- 1 small red bell pepper (roughly diced)
- 1 small-medium red onion (roughly diced)
- 2 teaspoons olive oil
- 1 tablespoon balsamic vinegar
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1 tablespoon grated parmesan cheese (optional; or grated Romano cheese)

Instructions
- Prep: Pre-heat air fryer for 5 minutes on highest temperature setting.
- Season: Combine vegetables with olive oil, vinegar, garlic, Italian seasoning, garlic powder, salt, and pepper. Place in hot air fryer basket (cook in two batches if necessary).
- Cook: Air fry at 390°F for 7-8 minutes. Shake basket, sprinkle vegetables with parmesan cheese. Air fry for 3-8 more minutes, until tender to your liking.
Notes
- This recipe works well with other vegetables like asparagus or bell peppers.
- Adjust the cooking time depending on how tender you like your vegetables.
