- 1 ½ cups puffed rice cereal
- ½ cup desiccated coconut
- ¼ cup dried cranberries, chopped
- ¼ cup roasted pistachios, chopped
- 2 tbsp coconut oil (optional, for smoother melt)
- 1 tbsp freeze-dried raspberries or rose petals (for topping)
- 1 tsp vanilla extract
- Silicone or paper muffin liners
Instructions
- Melt the white chocolate and coconut oil in a heatproof bowl over simmering water, stirring until smooth.
- In a large bowl, mix puffed rice, coconut, cranberries, and pistachios.
- Pour the melted chocolate and vanilla into the dry mix, stirring until fully coated.
- Scoop the mixture into muffin liners in a pan, pressing down gently.
- Sprinkle freeze-dried raspberries or rose petals on top and chill for 1 hour or until set.
Notes
- These treats can be stored in an airtight container in the refrigerator for up to a week.
