Description

A moist and flavorful Hawaiian Guava Cake topped with a delicious guava glaze and whipped cream frosting.


Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 3/4 cup whole milk
  • 1 cup guava puree (for glaze)
  • 1/2 cup granulated sugar (for glaze)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 1/2 cups heavy whipping cream (for frosting)
  • 1/4 cup powdered sugar (for frosting)
  • 1/2 cup guava puree (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a separate large bowl, cream the softened butter and granulated sugar until pale and fluffy. Add the egg whites one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix gently until just combined.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool completely in the pan.
  7. In a small saucepan, combine guava puree and granulated sugar over medium heat.
  8. In a small bowl, mix cornstarch and water to create a slurry. Stir it into the guava mixture.
  9. Cook until slightly thickened and glossy. Remove from heat and let it cool slightly.
  10. Once the cake has cooled, gently poke small holes across the surface using a fork. Pour the guava glaze evenly over the cake.
  11. In a chilled bowl, whip the heavy cream and powdered sugar until soft peaks form. Gently fold in the guava puree until smooth and lightly pink.
  12. Spread the frosting evenly over the glazed cake. Refrigerate for at least 1 hour before serving.
